A Farinha de Mandioca

Existem diversas prensas, as roscas de sem fim (as de arataca, as de arrochador) que comprimem o tipiti, tirando o líquido. O líquido decantado dá a goma do polvilho e o polvilho é usado também na alimentação (biscoitos, sequilhos de polvilho...) Os blocos de massa de mandioca retirados da prensa são desfeitos e passados numa urupemba (peneira), deixando a massa pronta para ir ao forno. Algumas pessoas preferem deixar a massa "dormir" antes de ir para o forno, para ficar mais saborosa. Outras torram-na no mesmo dia e está pronta a farinha de mandioca.
